Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. Line 6 muffin cups with foil or silicone liners and spray with avocado oil.
Mixing
  1. In a medium bowl, whisk the eggs, pumpkin puree, melted butter, stevia, vanilla, and cinnamon together.
  2. Slowly whisk in the coconut flour until the mixture is very smooth and then mix in the baking powder.
Baking
  1. Using a 4-tablespoon scoop, portion the thick batter into the prepared muffin cups.
  2. Place in the oven and bake until set, about 22-25 minutes, or until a toothpick inserted into the center comes out clean.
  3. Transfer the muffins to a cooling rack and allow them to cool completely before enjoying.
Optional Frosting
  1. Frost the muffins with cream cheese icing if desired for extra flavor.
