Preparation
- Preheat the oven to 350°F.
- Line 6 muffin cups with foil or silicone liners and spray with avocado oil.
Mixing
- In a medium bowl, whisk the eggs, pumpkin puree, melted butter, stevia, vanilla, and cinnamon together.
- Slowly whisk in the coconut flour until the mixture is very smooth and then mix in the baking powder.
Baking
- Using a 4-tablespoon scoop, portion the thick batter into the prepared muffin cups.
- Place in the oven and bake until set, about 22-25 minutes, or until a toothpick inserted into the center comes out clean.
- Transfer the muffins to a cooling rack and allow them to cool completely before enjoying.
Optional Frosting
- Frost the muffins with cream cheese icing if desired for extra flavor.
