Preparation
  1. Heat the skillet. Place the skillet over low heat and add oil to ensure the potatoes don't stick.
  2. Add potatoes. Place the fingerling potatoes in the skillet with the oil, and season with kosher salt and fresh cracked pepper.
Cooking
  1. Cover and cook. Cook the potatoes with a tight lid for about 20-25 minutes, shaking the pan occasionally to prevent burning.
  2. Rest the potatoes. Remove from heat and let them sit for 5 minutes without removing the lid to steam.
Serving
  1. Toss with herbs. Toss potatoes with fresh rosemary before serving hot.

Notes

This recipe can also be grilled. Prepare the grill for cooking, toss potatoes with oil, rosemary, salt, and pepper, then divide into foil packets and grill for 20-25 minutes.
