Preparation
- Prepare the slow cooker. Put the cherry tomatoes, feta, oregano, garlic, balsamic vinegar, and salt and pepper into the slow cooker.
Cooking
- Cook on HIGH for 2 hours or LOW for 3 hours until tomatoes are soft and bursting.
- Blend the sauce with a hand blender or mash with a fork until desired consistency is reached.
- Boil the pasta in salted water according to package instructions, then drain.
Serving
- Add the basil and pasta to the sauce in the slow cooker and stir well to combine.
Notes
For the best results, use fresh ingredients and consider adding a sprinkle of red pepper flakes for some heat. Adjust salt after blending for a balanced flavor profile.
