Preparation
- In a medium bowl, whisk together the bread flour, finely ground espresso, malted milk powder, corn starch, and baking soda.
- In the bowl of a stand mixer, cream together the light brown sugar, salted butter, granulated sugar, vanilla bean paste, and salt until smooth.
- Incorporate the large egg and the additional egg yolk, beating until the mixture is light and creamy.
- Gradually mix the dry ingredients into the wet ingredients, ensuring even incorporation.
- Fold in 1 1/2 cups of the dark chocolate chips, reserving the remaining chips for topping.
- Use a cookie scoop to measure the dough into balls, pressing the reserved chocolate chips into the top of each ball.
- Place the dough uncovered in the fridge for at least 2 hours, preferably overnight, to enhance flavors and texture.
Cooking
- Preheat your oven to 350°F and prepare a parchment-lined baking sheet.
- Place the cookie balls on the baking sheet at least 3 inches apart to allow for spreading.
- Optionally sprinkle with flaky sea salt before baking for 12 to 15 minutes, until the edges are golden brown.
Serving
- Let the cookies cool on the pan for a few minutes before transferring to a wire rack to finish cooling.
