  • 2 pieces English muffins, split in half
For the Toppings
  • 1 tablespoon Olive oil Used for sautéing the mushrooms

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small skillet, heat olive oil over medium heat and sauté sliced mushrooms for 5–6 minutes until browned and tender. Season with salt and pepper.
Assembly
  1. Place the English muffin halves cut-side up on the baking sheet and spread marinara sauce on each half.
  2. Sprinkle shredded vegan mozzarella over the sauce, then distribute the sautéed mushrooms and diced bell peppers on top. Sprinkle Italian seasoning.
Baking
  1. Bake in the oven for 10–12 minutes, until the cheese is melted and bubbly, and the edges of the muffins are golden. Broil briefly for extra browning if desired.
Serving
  1. Remove from the oven and garnish with fresh basil leaves. Serve warm.
