Method
 

Preparation
  1. STEP 1. Prepare the Eggplant. Cut the eggplant and slice lengthwise. Salt the slices and let sit for 1 hour.
  2. STEP 2. Combine Filling. Combine the Ricotta filling ingredients and set aside.
  3. STEP 3. Set Up Breading Station. Set up a breading station with flour, eggs, and breadcrumbs.
Cooking
  1. STEP 4. Bread and Fry. Bread the eggplant slices and fry in heated oil until golden.
  2. STEP 5. Preheat Oven. Preheat oven to 375°F. Spread marinara on a baking dish, fill and roll eggplant slices, and place seam-side down.
  3. STEP 6. Add Toppings. Top with remaining marinara, mozzarella, parmesan, and parsley.
  4. STEP 7. Bake. Bake for 20-25 minutes, and optionally broil for additional browning.
Serving
  1. STEP 8. Rest Before Serving. Let stand for 5 minutes before serving.
