Method
 

Preparation
  1. Slice the cucumbers using a mandolin slicer into thin slices.
  2. Thinly slice the radishes and combine with the cucumbers in a bowl.
  3. Slice the red onion into thin slices and toss with the cucumbers and radishes.
Mixing
  1. Add the chopped parsley and dill, mixing well to distribute throughout.
  2. In a separate bowl, combine the apple cider vinegar, olive oil, honey, salt, and pepper. Whisk well to combine.
Refrigeration
  1. Pour the apple cider vinegar mixture over the cucumber salad and stir to ensure everything is coated.
  2. Cover the cucumber salad and refrigerate for at least an hour before serving to allow flavors to meld.

Notes
