Preparation
- Prepare the potatoes by placing peeled, washed, and diced potatoes in a medium saucepan and cover with cold water. Simmer for about 15-20 minutes until tender. Drain and return to the pan.
- Mash the potatoes by combining cream and butter, microwaving until warm, then adding to potatoes and mashing until smooth. Stir in cream cheese, salt, and pepper. Set aside.
- Preheat the oven to 400°F (200°C). Grease a 9×13 inch baking dish.
Cooking
- In a skillet, heat oil and sauté onion for 1 minute. Add garlic and sauté for 30 seconds.
- Add ground meat, season with salt and pepper, and cook until browned. Stir in tomato sauce, Worcestershire sauce, herbs, and optional beef broth; simmer covered for 10 minutes.
- Stir in the carrot, corn, and peas.
Assembly and Baking
- Spread the meat mixture in the baking dish, top with mashed potatoes, and smooth the top.
- Bake for 25-30 minutes until potatoes begin to brown. Let cool for 15 minutes, garnish with chopped green onions, and serve.
Notes
For best results, use a potato ricer for the fluffiest mashed potatoes. You can also add a dash of garlic powder or onion powder to the potatoes for extra flavor. Try mixing different types of cheeses into the mashed potatoes for a gourmet twist. Let the shepherd's pie cool slightly before serving to help it hold its shape.
