Method
 

Preparation
  1. Heat your oil in a large skillet over medium heat.
  2. Add the pepper and onion, then sauté for 5 minutes or until tender.
  3. Stir in the garlic and cook for 30 seconds, until it just starts to release its flavor.
  4. Add the marinara sauce, sea salt, and pepper, then stir to combine.
Cooking
  1. Bring your sauce to a bubble, then reduce the heat to low.
  2. With the back of your wooden spoon, create 4 spaces in the thick sauce and gently crack an egg into each one.
  3. Cover and cook until the egg whites are fully set and the yolks are done to your liking; 5-8 minutes.
  4. Garnish with crumbled feta cheese and freshly chopped parsley if desired. Serve with Ezekiel toast, if desired. Enjoy!

Notes

Use fresh ingredients for maximum flavor. Experiment with different spices like cumin or paprika for added depth. Adjust the cooking time based on how you like your eggs.
