Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and bell pepper. Cook until soft, about 5 minutes.
  3. Stir in minced garlic, cumin, paprika, and chili powder. Cook for 1 minute until fragrant.
  4. Add canned tomatoes and bring the mixture to a simmer. Cook for 10 minutes, stirring occasionally.
  5. Make small wells in the sauce and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are just set, about 5-8 minutes.
  7. Remove from heat and sprinkle with fresh herbs.

Notes

For best results, use a combination of diced and crushed tomatoes. Can be customized with various ingredients and toppings.
