- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and bell pepper. Cook until soft, about 5 minutes.
- Stir in minced garlic, cumin, paprika, and chili powder. Cook for 1 minute until fragrant.
- Add canned tomatoes and bring the mixture to a simmer. Cook for 10 minutes, stirring occasionally.
- Make small wells in the sauce and crack an egg into each well.
- Cover the skillet and cook until the eggs are just set, about 5-8 minutes.
- Remove from heat and sprinkle with fresh herbs.
Notes
For best results, use a combination of diced and crushed tomatoes. Can be customized with various ingredients and toppings.
