Preparation
- Soak dates in hot water for 5 minutes if they are not very soft.
- In a food processor, blitz walnuts, pecans, and oats together to create a coarse mixture.
- Add soaked dates, pumpkin puree, maple syrup, and pumpkin pie spice to the mixture and pulse until it starts to form a ball.
Cooking
- If the mixture is too wet, add more oats, walnuts, or pecans. If too dry, add more pumpkin puree or a bit of the water from the soaked dates.
Serving
- Using a small cookie scoop or tablespoon, portion out the dough and roll it into smooth balls.
- Enjoy immediately or store in the freezer for up to 4 weeks or in the fridge for 1-2 weeks.
