  • 1 cup Cucumber Chopped.
  • 1 cup Cherry tomatoes Halved.
  • 1/2 medium Red onion Chopped.
  • 1/2 cup Feta cheese Crumbled.
Dressing and Seasoning
  • 2 tbsp Olive oil For grilling and drizzling.
  • 2 tbsp Lemon juice Freshly squeezed.
  • 1 tbsp Fresh herbs (parsley, mint) Chopped.

Preparation
  1. Cook the brown rice according to package instructions.
  2. While the rice cooks, heat a grill or skillet over medium-high heat.
  3. Season the steak with salt, pepper, and olive oil, then grill for 5-7 minutes on each side, or until it reaches your desired doneness.
  4. Remove the steak and let it rest for a few minutes before slicing it thinly against the grain.
  5. Chop the cucumber, halved cherry tomatoes, and red onion.
Assembly
  1. In a large bowl, combine the cooked rice, fresh vegetables, and sliced steak.
  2. Drizzle with olive oil and lemon juice, then toss gently to combine.
  3. Top with crumbled feta and chopped herbs before serving.
