Preparation
- Wash and chop the green tomatoes, onions, jalapeños, and bell pepper into small, even pieces.
Cooking
- In a wide saucepan, combine the chopped vegetables with vinegar, sugar, salt, coriander seeds, mustard seeds, celery salt, and turmeric.
- Heat the mixture over medium-high heat until it reaches a boil, stirring continuously to dissolve the sugar.
- Reduce the heat and simmer uncovered for 30–40 minutes, stirring occasionally, until the vegetables soften and the mixture thickens.
- If desired, mix the corn starch with a little cold water and drizzle it into the simmering relish until it thickens slightly.
- Ladle the hot relish into sterilized jars, seal them, and allow to cool. For longer storage, process in a boiling water bath for 10 minutes.
Notes
Use ripe green tomatoes for optimal flavor. Let the relish cool completely before storing to prevent condensation in jars. Experiment with sugar and vinegar ratios for desired sweetness and tang.
