Preparation
  1. Rinse the dried figs to remove any impurities and pat them dry with a paper towel.
  2. Chop the figs into small pieces and place them in a medium saucepan.
  3. Add sugar, water, and fresh lemon juice to the saucepan.
Cooking
  1. Cook over medium heat, stirring occasionally, until the sugar dissolves and the mixture comes to a gentle boil (about 5-7 minutes).
  2. Reduce the heat to low and let it simmer for 20-25 minutes, stirring frequently. The mixture will thicken as it cooks.
  3. After 25 minutes, if desired, stir in vanilla extract.
  4. Remove from heat and let cool before transferring to sterilized jars.

Notes

For a smoother jam, blend the cooked mixture using an immersion blender before cooling. Try substituting honey for sugar for a more natural sweetness.
