Preparation
- Rinse the dried figs to remove any impurities and pat them dry with a paper towel.
- Chop the figs into small pieces and place them in a medium saucepan.
- Add sugar, water, and fresh lemon juice to the saucepan.
Cooking
- Cook over medium heat, stirring occasionally, until the sugar dissolves and the mixture comes to a gentle boil (about 5-7 minutes).
- Reduce the heat to low and let it simmer for 20-25 minutes, stirring frequently. The mixture will thicken as it cooks.
- After 25 minutes, if desired, stir in vanilla extract.
- Remove from heat and let cool before transferring to sterilized jars.
Notes
For a smoother jam, blend the cooked mixture using an immersion blender before cooling. Try substituting honey for sugar for a more natural sweetness.
