Homemade bagels that are soft, chewy, and quick to make using Greek yogurt and baking powder instead of yeast.

Ingredients
  

For the bagels
  • 2 cups all purpose flour Forms the base of the dough, providing structure.
  • 1 tbsp baking powder Acts as a leavening agent for a light texture.
  • 1 tsp kosher salt Adds flavor to the bagels.
  • 1 cup non fat plain Greek yogurt Contributes moisture and a tender crumb.
  • 1 large egg Used for the egg wash to create a shiny crust.
  • 1 tbsp water Mixed with the egg for the egg wash.
  • to taste everything bagel seasoning Optional topping for extra flavor.

Method
 

Preparation
  1. Preheat the oven to 375 degrees F with the rack in the upper middle position.
  2. Place parchment paper on a baking sheet and spray with nonstick cooking spray.
  3. In a medium mixing bowl, whisk together the flour, baking powder, and salt until well incorporated.
  4. Incorporate the yogurt and mix with a fork until the mixture forms a shaggy, crumbly dough.
  5. Transfer the dough to a clean work surface dusted with flour. Knead until the dough comes together and no crumbs remain.
Shaping & Baking
  1. Divide the dough into 4 equal balls and roll each into a 3/4 inch thick rope; join and seal the ends to form a circle.
  2. Brush the top of each bagel with the egg wash (egg mixed with water).
  3. Sprinkle the tops with everything bagel seasoning if desired.
  4. Bake for 25 minutes, watching closely toward the end to ensure they don’t over-brown.
  5. Allow the bagels to cool for at least 15 minutes before slicing in half and serving.

Notes

Serve warm with cream cheese, smoked salmon, or enjoy plain. Experiment with toppings like sesame seeds or poppy seeds for variety.
