Preparation
- Preheat the oven to 350 degrees F.
- In a large bowl, whisk together the eggs, dill, milk, mustard powder, sea salt, and pepper.
- Gently fold in the flaked salmon.
- Heat olive oil in a large oven-safe skillet over medium heat.
- Add green onions, garlic, and chopped asparagus. Sauté for 3-4 minutes until tender.
- Pour the salmon and egg mixture into the skillet, stirring to distribute evenly.
- Cook on medium-low heat until the edges are nearly set, about 3-4 minutes.
- Transfer the skillet to the oven and bake for 8-10 minutes until the eggs are fully set.
- Serve warm, topped with a dollop of Greek yogurt.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. You can also freeze portions wrapped tightly for up to three months.
