- In a Dutch oven or large pot, add oil and heat until hot.
- Add onion, carrots, and celery, then sauté for 5-6 minutes, stirring occasionally.
- Stir in garlic, ginger, turmeric, cayenne, salt, and pepper, sautéing for 1 minute longer.
- Add bell pepper, vegetable broth, coconut milk, and chicken to the pot.
- Bring to a boil, then reduce heat to a simmer and cover the pot. Let it simmer for about 20 minutes until chicken is fully cooked.
- Remove chicken, shred it, and return it to the pot.
- Stir in the kale and simmer for an additional 3-4 minutes until it is wilted.
- Stir in cilantro, tamari, and lemon juice. Serve topped with extra cilantro alongside toasted sourdough or crackers.
Notes
This soup stores well in the refrigerator for up to 4 days and can be frozen for up to 3 months. Reheat on the stovetop over medium-low heat.
