Method
 

Preparation
  1. In a bowl, whisk together evoo, minced garlic, and herbs to create the marinade.
  2. Slice the zucchini, bell peppers, and onion; leave cherry tomatoes whole.
  3. Combine the veggies in a zip-top bag with the marinade and let sit for at least 30 minutes.
Cooking
  1. Preheat the grill to medium-high (about 375°F or 190°C).
  2. Place the marinated veggies on the grill and cook for 8-10 minutes, flipping halfway through until tender and charred.
Serving
  1. Transfer the grilled veggies to a platter and enjoy warm.

Notes

For maximum flavor, marinate the vegetables for 1-2 hours if time allows. Feel free to substitute your favorite veggies or add lemon juice before serving for freshness.
