Preparation
- Preheat the oven to 350 degrees F.
- Line a 9x5 standard loaf pan with parchment paper.
- In a medium bowl, add chopped dates and pour boiling water over them.
- Add the butter to the bowl with the dates and set aside.
- In a large bowl, beat together granulated sugar, brown sugar, and egg until light and incorporated.
- In another bowl, whisk together flour, baking powder, salt, and cinnamon.
- Gradually mix the dry ingredients into the wet mixture, alternating with the date and water mixture.
- Gently fold in the chopped pecans with a spatula.
Baking
- Pour the batter into the prepared loaf pan.
- Bake for 45 to 55 minutes, or until a tester comes out clean.
- Cool the loaf for at least 15 minutes before slicing.
Notes
Allow the loaf to cool completely for easier slicing. You can add mix-ins like dried fruit or chocolate chips for variation.
