Method
 

Preparation
  1. Preheat the oven to 350 degrees F.
  2. Line a 9x5 standard loaf pan with parchment paper.
  3. In a medium bowl, add chopped dates and pour boiling water over them.
  4. Add the butter to the bowl with the dates and set aside.
  5. In a large bowl, beat together granulated sugar, brown sugar, and egg until light and incorporated.
  6. In another bowl, whisk together flour, baking powder, salt, and cinnamon.
  7. Gradually mix the dry ingredients into the wet mixture, alternating with the date and water mixture.
  8. Gently fold in the chopped pecans with a spatula.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 45 to 55 minutes, or until a tester comes out clean.
  3. Cool the loaf for at least 15 minutes before slicing.

Notes

Allow the loaf to cool completely for easier slicing. You can add mix-ins like dried fruit or chocolate chips for variation.
