Preparation
- Line a small baking sheet with parchment paper.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring each time, until melted and smooth (or use a double boiler).
- Fold in most of the peanuts, saving a few for topping.
- Pour the chocolate mixture onto the baking sheet and spread it into an even layer. Sprinkle the reserved peanuts (and sea salt, if using) on top.
- Refrigerate for 20 minutes, or until firm. Let the bark sit at room temperature before cutting into pieces.
- Store in an airtight container at room temperature, in the fridge, or freezer for up to 1 month.
Notes
To customize, consider adding dried fruits, different nuts, or drizzling with melted white chocolate. Avoid overheating the chocolate and always stir while melting to prevent it from seizing.
