Method
 

Preparation
  1. Wash and slice the cucumbers thinly, ideally using a mandoline for uniformity.
  2. In a bowl, mix the cream cheese with lemon juice, dill (or parsley), salt, and pepper until smooth.
Assembly
  1. Spread an even layer of the cream cheese mixture on one side of each bread slice.
  2. Arrange a layer of cucumber slices on half of the bread slices.
  3. Place another slice of bread on top, cream cheese side down, and press gently.
Serving
  1. Trim the crusts if desired, then cut each sandwich into quarters or fingers. Enjoy immediately or refrigerate until serving.

Notes

Pat cucumber slices dry to avoid soggy bread. Store prepared sandwiches in an airtight container in the fridge for up to 24 hours.
