Preparation
  1. Wash the cucumber thoroughly and slice it thinly, about 1/8-inch thick.
  2. In a mixing bowl, combine the cream cheese, dill, lemon juice, salt, and black pepper. Mix until smooth.
  3. Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
  4. Layer the cucumber slices evenly over the cream cheese on half of the bread slices.
  5. Top with the remaining bread slices, cream cheese side down, to create sandwiches.
  6. Slice the sandwiches into quarters or halves, depending on your preference.
  7. Serve immediately or store in the fridge until ready to serve.

Notes

For extra flavor, add a pinch of garlic powder to the cream cheese mixture. Use gluten-free bread for a suitable alternative. For a spicier kick, layer sliced jalapeƱos with the cucumber. Prep the cream cheese spread a day ahead to save time. Make sure to dry the cucumber slices with a paper towel to prevent sogginess.
