Cucumber Avocado Feta Salad

Easy to make salad made with cucumbers, avocado, feta cheese, and a handful of herbs. Tossed in with a homemade Italian Vinaigrette.

Ingredients
  

  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • kosher salt and pepper, to taste
  • 1 pound Persian cucumbers, sliced
  • 1 large avocado, or 2 medium, sliced
  • 1 small red onion, thinly sliced
  • 2 tablespoons parsley, minced
  • 2 tablespoons basil leaves, minced
  • 1/2 cup feta cheese, crumbled

Equipment

  • small jar with lid for dressing
  • mixing bowl

Method
 

  1. Place the oil, vinegar, garlic, lemon juice, and seasonings in a small jar and shake to emulsify.
  2. In a mixing bowl, add the sliced cucumbers, avocado, red onion, and parsley.
  3. Pour over the dressing and toss to combine. Top with crumbled cheese, basil (if using), and serve immediately.

Notes

Use firm but ripe avocados. Fresh cucumbers are ideal for a delicious crunchy salad. You may use store-bought crumbled feta. It is best to use fresh lemons and garlic for the best taste.
