Preparation
- Chop the broccoli, dice the onion and garlic, then grate the carrots.
Cooking
- Place the chopped broccoli, carrots, onion, and garlic in the slow cooker.
- Top with cream cheese, oregano, nutmeg, and chicken broth. Stir to combine, then cover and cook on high for 2 hours or low for 4-6 hours until the broccoli is tender.
- Once the broccoli is tender, remove the lid and stir in the evaporated milk.
- Using an immersion blender, blend three quarters of the soup for a mostly smooth texture with some chunky broccoli bits remaining.
- Recover the soup and cook on low for an additional 10 minutes until warmed.
- Stir in salt, pepper, and cheddar cheese until melted. Cook on high for 5 more minutes to ensure the soup is hot and cheese fully melted.
Serving
- Dish out the soup into bowls and enjoy while hot.
