Method
 

Preparation
  1. Chop the broccoli, dice the onion and garlic, then grate the carrots.
Cooking
  1. Place the chopped broccoli, carrots, onion, and garlic in the slow cooker.
  2. Top with cream cheese, oregano, nutmeg, and chicken broth. Stir to combine, then cover and cook on high for 2 hours or low for 4-6 hours until the broccoli is tender.
  3. Once the broccoli is tender, remove the lid and stir in the evaporated milk.
  4. Using an immersion blender, blend three quarters of the soup for a mostly smooth texture with some chunky broccoli bits remaining.
  5. Recover the soup and cook on low for an additional 10 minutes until warmed.
  6. Stir in salt, pepper, and cheddar cheese until melted. Cook on high for 5 more minutes to ensure the soup is hot and cheese fully melted.
Serving
  1. Dish out the soup into bowls and enjoy while hot.
