Preparation
- In a medium saucepan over low to medium heat, add two tablespoons of vegetable oil. Add minced garlic and ginger and cook, stirring, for 30 seconds.
- Whisk in brown sugar, red pepper flakes, soy sauce, rice vinegar, and water.
- Cook until slightly thickened, about 5-10 minutes, and set aside.
- Coat sliced chicken with cornstarch until evenly distributed.
Cooking
- Heat 1 cup of vegetable oil in a large saucepan over medium-high heat.
- Once hot, add chicken and fry until browned and cooked through, about 1-2 minutes.
- Transfer chicken to a paper towel-lined plate to drain excess oil.
Serving
- Add chicken back to the skillet, pour in the sauce mixture, and cook over medium heat until the sauce thickens, about 2-3 minutes.
- Stir in green onions and garnish with sesame seeds if desired.
- Enjoy immediately over rice.
