Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and boil the baby potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly to make smashing easier.
Cooking
  1. Place the potatoes on a baking sheet lined with parchment paper and smash each potato until flattened but still intact.
  2. In a small bowl, mix olive oil, minced garlic, salt, and pepper.
  3. Brush the garlic oil mixture generously over each smashed potato.
  4. Sprinkle grated parmesan on top of each potato.
  5. Bake in the preheated oven for 20-25 minutes, or until golden and crispy.
  6. Remove from oven and sprinkle with fresh parsley before serving.
