Preparation
- Preheat your oven to 425°F (220°C).
- Wash and boil the baby potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly to make smashing easier.
Cooking
- Place the potatoes on a baking sheet lined with parchment paper and smash each potato until flattened but still intact.
- In a small bowl, mix olive oil, minced garlic, salt, and pepper.
- Brush the garlic oil mixture generously over each smashed potato.
- Sprinkle grated parmesan on top of each potato.
- Bake in the preheated oven for 20-25 minutes, or until golden and crispy.
- Remove from oven and sprinkle with fresh parsley before serving.
Notes
Use even-sized potatoes for uniform cooking. For a flavor boost, consider adding crushed red pepper flakes to the oil mixture. Ensure potatoes dry slightly before smashing for perfect crisp.
