Preparation
- Preheat the oven to 425°F to prepare for roasting the chicken.
- Line a rimmed baking sheet with high-heat-resistant parchment paper or lightly grease a 9 x 13-inch rimmed baking dish.
- Place the chicken pieces in the baking dish, ensuring they have space around them for even cooking.
- Sprinkle the chicken leg quarters with kosher salt, black pepper, garlic powder, paprika, and dried thyme.
Cooking
- Place the dish in the oven and bake uncovered for 30 minutes.
- If the tops are very browned but not at least 165°F internally, loosely cover the pan with foil and return to the oven for 10-15 additional minutes.
Serving
- After removing from the oven, allow the chicken to rest for five minutes for the juices to redistribute.
Notes
For best results, use a thermometer to check for doneness at 165°F. Broil for extra crispiness during the last few minutes, and feel free to adapt the recipe with different herbs or spices to suit your taste.
