Preparation
  1. Preheat the oven to 425°F to prepare for roasting the chicken.
  2. Line a rimmed baking sheet with high-heat-resistant parchment paper or lightly grease a 9 x 13-inch rimmed baking dish.
  3. Place the chicken pieces in the baking dish, ensuring they have space around them for even cooking.
  4. Sprinkle the chicken leg quarters with kosher salt, black pepper, garlic powder, paprika, and dried thyme.
Cooking
  1. Place the dish in the oven and bake uncovered for 30 minutes.
  2. If the tops are very browned but not at least 165°F internally, loosely cover the pan with foil and return to the oven for 10-15 additional minutes.
Serving
  1. After removing from the oven, allow the chicken to rest for five minutes for the juices to redistribute.
