Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Line a rimmed baking sheet with parchment paper and coat it with olive oil spray.
  3. Cut the zucchini into 1/8-inch-thick rounds.
  4. Sprinkle the zucchini slices with 1/2 teaspoon of kosher salt.
  5. Place the salted zucchini in a colander and let it stand for 30 minutes.
  6. After 30 minutes, rinse the zucchini slices and blot them dry with paper towels.
Baking
  1. Arrange the zucchini slices in a single layer on the prepared baking sheet.
  2. Lightly spray the zucchini slices with olive oil.
  3. Bake the zucchini chips for 15 minutes.
  4. Sprinkle the chips with the remaining 1/4 teaspoon of kosher salt, black pepper, garlic powder, and grated Parmesan.
  5. Return to the oven and continue baking until the zucchini slices are browned and crisp, about 15-20 more minutes.

Notes

For best results, slice zucchini evenly, avoid overcrowding the baking sheet, and ensure proper draining for maximum crispiness. Store leftovers in an airtight container at room temperature for 1-2 days.
