Method
 

Preparation
  1. In a large saucepan, whisk together the brown sugar, cornstarch, cinnamon, nutmeg, turmeric, allspice, and salt until combined.
Cooking
  1. Whisk in the milk, cream, pumpkin puree, vanilla bean and scrapings, and ginger.
  2. Place the pot over medium heat and gradually bring to a boil, whisking constantly.
  3. Once it boils, cook, whisking for 2 minutes.
  4. Remove from heat and whisk in the butter.
  5. Strain through a mesh strainer into heatproof cups or jars.
  6. Chill until set, at least 2 hours.
  7. Serve topped with whipped mascarpone and optional toppings.

Notes

For best results, whisk your dry ingredients thoroughly to prevent lumps. Use high-quality pumpkin puree for the best flavor.
