Preparation
- In a large saucepan, whisk together the brown sugar, cornstarch, cinnamon, nutmeg, turmeric, allspice, and salt until combined.
Cooking
- Whisk in the milk, cream, pumpkin puree, vanilla bean and scrapings, and ginger.
- Place the pot over medium heat and gradually bring to a boil, whisking constantly.
- Once it boils, cook, whisking for 2 minutes.
- Remove from heat and whisk in the butter.
- Strain through a mesh strainer into heatproof cups or jars.
- Chill until set, at least 2 hours.
- Serve topped with whipped mascarpone and optional toppings.
Notes
For best results, whisk your dry ingredients thoroughly to prevent lumps. Use high-quality pumpkin puree for the best flavor.
