Preparation
  1. Combine graham cracker crumbs, granulated sugar, melted butter, and a pinch of salt in a bowl. Stir until well combined and sandy.
  2. Firmly press the crust mixture into the bottom of a 9x9 inch baking dish to form an even layer.
  3. In a mixing bowl, whisk together sweetened condensed milk, egg yolks, fresh lemon juice, lemon zest, and salt until smooth.
Assembly
  1. Pour the lemon filling over the prepared crust and spread it evenly with a spatula.
  2. Refrigerate the bars for at least four hours until the filling is set.
  3. Once set, cut into squares and dust with confectioners’ sugar and extra lemon zest before serving.

Notes

Use fresh lemons for best flavor. Allow the bars to chill overnight for improved texture and taste. Store leftovers in an airtight container in the refrigerator for up to a week.
