  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, and add them to the skillet. Cook for 6-7 minutes on each side until browned and cooked through (165°F or 74°C). Remove chicken and set aside.
  3. In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
  4. Pour in the chicken broth and lemon juice, bringing it to a simmer. Let it reduce for about 3-4 minutes.
  5. Stir in the heavy cream and let it thicken for 2-3 minutes, stirring often.
  6. Add the chicken back into the skillet and coat it with the sauce. Simmer for an additional 2 minutes.
  7. Garnish with fresh parsley before serving.

Notes

Tips: For a deeper flavor, marinate the chicken in lemon juice for 30 minutes before cooking. Substitute heavy cream with coconut milk or Greek yogurt for fewer calories.
