Preparation
- Slice your zucchini and place the slices in a colander, lightly sprinkling with salt. Set aside to draw out moisture.
- Preheat your oven to 400 degrees F.
- Heat 1 tablespoon of ghee in a large oven-safe skillet over medium heat.
- Add the chopped onion and sauté for 5 minutes, until softened.
- Stir in the minced garlic and cook for 1 minute.
- Stir in the coconut cream, bringing it to a low simmer, then incorporate the grated parmesan cheese until melted.
- Remove the skillet from heat. Blot zucchini slices with a paper towel to remove excess moisture and place them in a large bowl.
Assembly
- Toss the zucchini slices lightly with sea salt, pepper, and the remaining tablespoon of ghee.
- Arrange the zucchini slices over the sauce in the skillet.
- If desired, sprinkle with smoked paprika and shredded cheddar.
Baking
- Bake for 20 minutes or until the cheese is melty and bubbly.
- If desired, sprinkle with freshly chopped herbs before serving.
- Serve hot for the best experience.
