  • 1 tablespoon ghee A healthy fat choice that adds richness.

  • 1 cup unsweetened coconut cream Creates creaminess for the sauce.
  • 1/2 cup freshly grated parmesan Adds sharpness and complements the dish.
  • 4 cups zucchini, sliced Fresh vegetable providing a light texture.
  • 1/2 cup freshly shredded cheddar Offers a melty topping.
  • 1/2 teaspoon smoked paprika Adds a hint of smokiness.
  • 2 tablespoons freshly chopped parsley or basil Provides a fresh finish.

Method
 

Preparation
  1. Slice your zucchini and place the slices in a colander, lightly sprinkling with salt. Set aside to draw out moisture.
  2. Preheat your oven to 400 degrees F.
  3. Heat 1 tablespoon of ghee in a large oven-safe skillet over medium heat.
  4. Add the chopped onion and sauté for 5 minutes, until softened.
  5. Stir in the minced garlic and cook for 1 minute.
  6. Stir in the coconut cream, bringing it to a low simmer, then incorporate the grated parmesan cheese until melted.
  7. Remove the skillet from heat. Blot zucchini slices with a paper towel to remove excess moisture and place them in a large bowl.
Assembly
  1. Toss the zucchini slices lightly with sea salt, pepper, and the remaining tablespoon of ghee.
  2. Arrange the zucchini slices over the sauce in the skillet.
  3. If desired, sprinkle with smoked paprika and shredded cheddar.
Baking
  1. Bake for 20 minutes or until the cheese is melty and bubbly.
  2. If desired, sprinkle with freshly chopped herbs before serving.
  3. Serve hot for the best experience.

Notes

For best results, allow the dish to rest for a few minutes before serving to improve texture and flavor. Sauté garlic until golden for extra flavor.
