Preparation
- Heat the oil. Warm extra-virgin olive oil over medium-high heat in a large stockpot or Dutch oven.
- Sauté the vegetables. Add chopped carrots, diced celery, and onion; sauté until beginning to soften, about 7 minutes.
- Add garlic. Stir in minced garlic and cook for 1 minute until fragrant.
- Sprinkle the flour. Evenly sprinkle all-purpose flour over the vegetables and cook for 1 minute, stirring continually.
- Incorporate the broth. Slowly stir in low-sodium chicken stock and bring to a boil.
Cooking
- Simmer the soup. Reduce heat and simmer partially covered for 10 minutes.
- Add remaining ingredients. Stir in cooked shredded chicken, uncooked egg dumpling noodles, evaporated skim milk, kosher salt, dried oregano, and ground black pepper.
- Finish cooking. Cook the soup for 10 minutes or until the noodles are al dente.
- Serve warm. Ladle the soup into bowls and garnish with crushed tortilla chips, shredded cheese, and cilantro if desired.
Notes
This soup can be made in advance and stored in the refrigerator for up to 3 days, or frozen for up to 3 months. Reheat gently on the stove.
