Preparation
  1. In a medium saucepan over medium heat, melt the butter until bubbly.
  2. Whisk continuously until the flour is fully dissolved into the butter.
  3. Continue whisking for one minute to cook off the flour flavor.
  4. Add garlic powder, salt, pepper, and cayenne, if desired.
  5. Slowly pour in the milk while whisking continuously to ensure a lump-free mixture.
  6. Turn the heat to medium-high and whisk until the mixture comes to a low simmer, avoiding a boil.
  7. Continue whisking until the mixture has thickened to your desired consistency.
  8. Stir in the shredded cheese, whisking until fully melted and incorporated.
  9. Taste and adjust salt and pepper as needed.

Notes

This sauce can be made ahead and stored for up to four days. For best results, use freshly shredded cheese and whisk continuously to avoid lumps.
