Preparation
- In a Dutch oven or large skillet, heat olive oil over medium-low heat.
- Add onion, carrot, salt, and pepper; cook until the onion is brown and soft, about 10 minutes.
- Stir in minced garlic and cook until fragrant, about 30 seconds.
- Increase heat to medium-high and add ground beef; cook until browned and cooked through, about 6 minutes. Drain excess fat.
Cooking
- Stir in hot sauce, Dijon mustard, and smoked paprika. Add beef broth and scrape up any browned bits.
- Add water and bring to a boil over medium-high heat.
- Once boiling, add pasta and cook until al dente, stirring often. Add more water if too dry.
- Remove from heat, let cool for 1 minute, then stir in Greek yogurt and cheddar until melted.
- Stir in half of the chives and sprinkle the remaining on top. Serve hot.

For best results, consider adding a splash of Worcestershire sauce, adjust spice levels with hot sauce, and always check for moisture to keep the dish creamy.
