  • 8 ounces Brie cheese Let sit at room temperature for easier melting

  • 1/4 cup Fresh herbs, chopped (e.g., parsley, chives) Provides freshness
  • 1/4 cup Parmesan cheese, grated For topping

Method
 

Preparation
  1. Boil a large pot of salted water and add your choice of pasta. Cook according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large pan over medium heat.
  3. Add minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  4. Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
Cooking
  1. In the heated pan, lower the heat and add the cooked pasta, brie cheese, and a splash of the reserved pasta water.
  2. Toss everything together until the brie melts into a creamy sauce, adding more pasta water as needed for consistency.
  3. Stir in chopped fresh herbs and season with black pepper. Serve immediately.

Notes

This recipe is customizable; add vegetables or blend different cheese types for extra flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
