Preparation
- Preheat your oven to 400°F (200°C).
- Season the chicken thighs with salt and pepper on both sides.
Cooking
- Heat olive oil in an oven-safe skillet over medium-high heat. Add the chicken thighs skin-side down and sear for about 5-6 minutes until golden brown.
- Flip the chicken thighs over and add minced garlic, heavy cream, and parmesan cheese to the skillet. Stir to combine.
- Fold in fresh spinach and let it wilt slightly. Cook for 1-2 minutes.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven and allow to rest for 5 minutes before serving.
Notes
For crispier skin, try broiling the chicken thighs for the last 2-3 minutes of baking. Substitute heavy cream with coconut cream for a dairy-free version. Marinate the chicken thighs in a little garlic and olive oil for 30 minutes before cooking for an extra flavor kick.
