Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs with salt and pepper on both sides.
Cooking
  1. Heat olive oil in an oven-safe skillet over medium-high heat. Add the chicken thighs skin-side down and sear for about 5-6 minutes until golden brown.
  2. Flip the chicken thighs over and add minced garlic, heavy cream, and parmesan cheese to the skillet. Stir to combine.
  3. Fold in fresh spinach and let it wilt slightly. Cook for 1-2 minutes.
  4. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  5. Remove from the oven and allow to rest for 5 minutes before serving.

Notes

For crispier skin, try broiling the chicken thighs for the last 2-3 minutes of baking. Substitute heavy cream with coconut cream for a dairy-free version. Marinate the chicken thighs in a little garlic and olive oil for 30 minutes before cooking for an extra flavor kick.
