Ingredients
  

Main Ingredients
  • 2 pieces Haas avocados Ripe, for a creamy base.
  • 4 grams Diamond Crystal kosher salt Half for seasoning the avocados.
  • 2 grams Black pepper Ground, adds warmth.
  • 4 pieces Eggs Medium size for fitting in the avocados.
  • 1 gram Red pepper flakes For added kick.
  • 2 grams Parsley Freshly chopped, for garnish.

Method
 

Preparation
  1. Preheat the oven to 450°F and prepare your baking dish lined with foil for easy cleanup.
  2. Cut the avocado in half lengthwise and remove the pit. Scoop out a little of the flesh from each half to make room for the eggs.
  3. Sprinkle half of the kosher salt and black pepper into each avocado half and place them in the baking dish, standing upright.
Baking
  1. Crack each egg into a small bowl, then gently slide the yolk and as much of the white as possible into the center of each avocado half.
  2. Place the dish in the oven and bake until the egg whites are set, about 15 minutes.
  3. Carefully remove any thin crust from the egg yolks with a small knife. Season with the remaining kosher salt, black pepper, and red pepper flakes, then garnish with chopped parsley. Serve immediately.

Notes

This dish can be meal-prepped by preparing the avocados a few hours ahead and adding the eggs just before baking. Store leftovers in an airtight container in the fridge for up to 2 days.
