  • 1 can butter beans or cannellini beans Adds creaminess and protein to the soup.
  • 1 cup cottage cheese or plain Greek yogurt Contributes a creamy texture without heaviness.

Method
 

Preparation
  1. Preheat the oven to 400°F.
  2. Set your cottage cheese or Greek yogurt out on the counter to bring it to room temperature.
  3. Using a large sheet pan or baking dish, arrange your mushrooms, onion wedges, and garlic head.
  4. Sprinkle Italian seasoning, thyme, sea salt, and pepper over the vegetables.
  5. Drizzle the mixture with oil and stir to coat, then arrange in a single layer.
Cooking
  1. Roast for 30-35 minutes until caramelized, tossing halfway through for even cooking.
  2. While the vegetables roast, heat the beef bone broth in a pot until hot.
Blending
  1. Once the vegetables are done, squeeze the roasted garlic cloves into a blender and transfer the other contents into the blender, including the juices.
  2. Carefully add the hot bone broth, beans, and room-temperature cottage cheese or yogurt to the blender.
  3. Process until the mixture is smooth and creamy.
  4. For a thinner soup, add additional bone broth; for a creamier soup, add extra cottage cheese.
  5. Adjust with additional sea salt and pepper, if needed.

Notes

This soup is great for families or meal prep, and can be frozen for later convenience. Try adding a splash of soy sauce for extra flavor.
