Method
Preparation
- Preheat your oven to 350°F and line a 9x5 loaf pan with parchment paper.
- In a large bowl, using a handheld electric mixer, beat the butter and sugar together until light and fluffy.
- Incorporate the orange zest, eggs, half and half, and vanilla; beat until combined and smooth.
- Gradually mix in the flour, baking powder, and salt until just combined, being careful not to overmix.
- Pour half of the batter into the prepared pan and tap it to spread evenly, then scatter half of the cranberries on top.
- Repeat with the remaining batter and cranberries, ensuring even distribution.
Baking
- Bake for approximately 1 hour, or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for at least one hour before removing and cooling completely on a wire rack.
Glazing
- To prepare the glaze, whisk together powdered sugar, milk, and orange juice, then pour over the cooled loaf when set.
- Alternatively, dust with powdered sugar for a simpler presentation.
Serving
- Slice the bread and serve. It can be enjoyed warm with butter or as a sweet dessert with glaze.
Notes
Consider using fresh cranberries for a better flavor. You may also experiment by adding nuts or chocolate chips, if desired. Allow bread to cool completely before slicing for the best texture.
