Preparation
  1. Start the rice by cooking the basmati rice according to package instructions.
  2. Mince the onion, garlic, and ginger, and drain and rinse the chickpeas.
Cooking
  1. In a large skillet, heat the coconut oil or olive oil over medium-high heat.
  2. Add the minced onion and sauté for 5 minutes until translucent.
  3. Incorporate the garlic, ginger, and spinach, cooking for 2 minutes until the spinach is wilted.
  4. Pour in the crushed fire roasted tomatoes, curry powder, cumin, coriander, salt, and chickpeas. Cook for 5 minutes until bubbling.
  5. Add the full-fat coconut milk and stir until well combined; remove from heat.
Serving
  1. Serve with warm basmati rice and store any leftovers in the refrigerator for up to 3 days.

Notes

For added flavor, consider toasting spices briefly before adding other ingredients. You can also experiment with additional vegetables like bell peppers or carrots.
