Preparation
- Preheat the oven to 375°F.
- Pound the chicken to an even thickness and pat dry.
- Mix the spices and sprinkle half over the chicken, rubbing in to ensure even coating.
Cooking
- Heat olive oil in an oven-safe skillet and sear the chicken smooth side down for 3 minutes.
- Flip and cook for an additional 30 seconds. Remove the chicken from the pan.
- Add fire-roasted tomatoes to the skillet and let simmer for 1 minute.
- Stir in black beans, corn, green chiles, and remaining spices.
- Nestle the chicken back into the pan, brown side up, and spoon sauce over the top.
Finishing
- Bake the chicken for 7 to 10 minutes until it registers 160°F.
- Sprinkle cheese on top and broil until melted, about 1 to 2 minutes.
- Garnish with lime juice and cilantro before serving.
Notes
This recipe is great for meal prepping and can be easily customized with toppings. Leftovers can be stored in the refrigerator for up to 3 days, or frozen for up to 3 months.
