Preparation
  1. Preheat the oven to 375°F (200°C) to prepare for baking.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. Pour the plant-based milk, coconut milk, and 1 tablespoon of melted vegan butter into the dry mixture, stirring until just combined. The mixture will be a bit runny; let it rest for 15 minutes.
Cooking
  1. Place a cast iron skillet in the preheated oven for about 5-10 minutes. Then grease it with the remaining 3 tablespoons of melted vegan butter.
  2. Carefully pour the batter into the prepared skillet, spreading it evenly.
  3. Bake in the preheated oven for 20-25 minutes, or until the top is golden and the edges are nicely browned.
Serving
  1. Serve warm with additional vegan butter if desired.
