Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and let it cool slightly.
- Stir in granulated sugar and brown sugar until well combined.
- Add in the eggs one at a time, mixing until fully incorporated.
- Mix in vanilla extract and instant coffee until evenly distributed.
Mixing Ingredients
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
Baking
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
- Let the blondies cool in the pan before slicing them into squares.
Notes
Use high-quality instant coffee for a more robust flavor. For richer taste, brown the butter before combining with sugars. If desired, add walnuts or chocolate chips for texture. Allow to cool completely for cleaner cuts.
