Preparation
- Preheat your oven to 350 degrees F for even baking.
- Line two baking sheets with parchment paper for easy cleanup.
- In a stand mixer or large bowl, beat the butter, shredded coconut, and sugar together for about 2 minutes until light and fluffy.
Cooking
- Incorporate the egg, coconut extract, and vanilla extract into the creamed mixture until thoroughly combined.
- Gradually add in the flour, salt, baking powder, and baking soda until just combined, being careful not to over-mix.
- Use a spoon or medium cookie scoop to portion out 1 1/2 tablespoons of dough, placing them on the prepared baking sheets.
- If desired, roll the cookie dough balls in additional shredded coconut for extra flavor.
- Place in the oven and bake for 8-11 minutes until the edges are lightly golden brown and the centers look soft.
Serving
- Allow the cookies to cool on the baking sheets for 10 minutes.
- Move the cookies to a wire cooling rack to cool completely before serving.
