Method
 

Preparation
  1. Preheat your oven to 350 degrees F for even baking.
  2. Line two baking sheets with parchment paper for easy cleanup.
  3. In a stand mixer or large bowl, beat the butter, shredded coconut, and sugar together for about 2 minutes until light and fluffy.
Cooking
  1. Incorporate the egg, coconut extract, and vanilla extract into the creamed mixture until thoroughly combined.
  2. Gradually add in the flour, salt, baking powder, and baking soda until just combined, being careful not to over-mix.
  3. Use a spoon or medium cookie scoop to portion out 1 1/2 tablespoons of dough, placing them on the prepared baking sheets.
  4. If desired, roll the cookie dough balls in additional shredded coconut for extra flavor.
  5. Place in the oven and bake for 8-11 minutes until the edges are lightly golden brown and the centers look soft.
Serving
  1. Allow the cookies to cool on the baking sheets for 10 minutes.
  2. Move the cookies to a wire cooling rack to cool completely before serving.
