Method
 

Preparation
  1. Rinse the rice under cold water until the water runs clear, then set aside.
  2. In a large saucepan, melt coconut oil over medium-high heat until shimmering.
  3. Add the rinsed rice to the saucepan and stir until each grain is coated with the oil.
  4. Pour in the full-fat coconut milk, water (or vegetable broth), granulated sugar, and salt. Bring to a gentle boil.
  5. Cover with a lid, reduce heat to low, and let it simmer for 15 minutes until the liquid is absorbed.
  6. Turn off the heat and allow the rice to sit covered for 10 minutes.
  7. Use a fork to gently fluff the rice, adjusting consistency with more liquid if needed.
  8. Taste and adjust sugar or salt to your liking, then garnish and serve warm.

Notes

For best results, always rinse the rice to remove excess starch. High-quality coconut milk significantly enhances the dish. Let the rice rest to ensure fluffiness and feel free to modify flavors to your preference.
