Method
 

Preparation
  1. Rinse the uncooked jasmine rice under cold running water until mostly clear to remove excess starch.
  2. In a large high-sided saucepan, melt the coconut oil over medium-high heat.
  3. Add the rinsed rice and stir to coat evenly in the melted coconut oil.
  4. Pour in the coconut milk, water (or broth), sugar, and salt. Stir well and bring to a gentle boil.
Cooking
  1. Once boiling, cover with a lid, reduce heat to low, and let it simmer for 15 minutes without lifting the lid.
  2. After 15 minutes, turn off the heat and let the rice sit covered for 10 minutes to finish steaming.
  3. After the resting period, fluff the rice with a fork. If there is excess liquid, simmer for a minute or two.
  4. Taste and adjust sugar or salt if needed. Garnish with optional toppings before serving.

Notes

To ensure perfect coconut rice, always rinse the jasmine rice thoroughly and don’t lift the lid while it’s simmering. Customize with varied garnishes for flavor.
