Preparation
- Rinse the uncooked jasmine rice under cold running water until mostly clear to remove excess starch.
- In a large high-sided saucepan, melt the coconut oil over medium-high heat.
- Add the rinsed rice and stir to coat evenly in the melted coconut oil.
- Pour in the coconut milk, water (or broth), sugar, and salt. Stir well and bring to a gentle boil.
Cooking
- Once boiling, cover with a lid, reduce heat to low, and let it simmer for 15 minutes without lifting the lid.
- After 15 minutes, turn off the heat and let the rice sit covered for 10 minutes to finish steaming.
- After the resting period, fluff the rice with a fork. If there is excess liquid, simmer for a minute or two.
- Taste and adjust sugar or salt if needed. Garnish with optional toppings before serving.
