  • 1/4 cup chia seeds Helps pudding thicken.
  • 1/4 cup unsweetened shredded coconut For texture and sweetness.
  • 2 tablespoons raw honey or pure maple syrup Natural sweetener.
For Serving
  • 1 additional ripe mango Chopped for topping.

Method
 

Preparation
  1. STEP 1: Shake the coconut milk well before opening.
  2. STEP 2: Peel and slice the mango into bite-sized cubes and place them in a large bowl.
  3. STEP 3: Add the remaining ingredients into the bowl with the diced mango.
Mixing
  1. STEP 4: Stir the mixture well to combine all ingredients, ensuring the chia seeds are evenly mixed.
  2. STEP 5: Continue stirring for several minutes to help the chia seeds activate and gel.
Chilling
  1. STEP 6: Divide the mixture into 4 small glass jars and seal each with a lid.
  2. STEP 7: Refrigerate the jars overnight for best results.
  3. STEP 8: Optionally top with additional chopped mango before serving.

Notes

For best results, use full-fat coconut milk and allow the mixture to sit for 30 minutes before refrigerating. Experiment with various toppings and flavors.
