Method
 

Cooking the Rice
  1. Rinse the white rice until the water runs clear.
  2. Combine the rice with 2 cups of water in a medium pot and bring it to a boil.
  3. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until the water is absorbed.
Cooking the Chicken
  1. While the rice cooks, heat a tablespoon of oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Cut the chicken breast into bite-sized pieces and add them to the skillet.
  4. Cook until golden brown, about 6-8 minutes, stirring occasionally.
  5. Once the chicken is cooked, pour in the coconut milk and soy sauce. Stir well and let it simmer for an additional 5 minutes.
  6. Add chopped broccoli and red bell pepper. Cook for another 3-5 minutes until the vegetables are tender-crisp.
Serving
  1. Fluff the rice with a fork and serve it topped with the coconut chicken mixture.
