Preparation
- Line an 8×8 inch baking pan with parchment paper for easy removal.
- In a saucepan on medium heat, combine nut butter and honey, stirring frequently until smooth and warm (about 3-4 minutes).
- In a large bowl, combine oats, rice cereal, dried fruits, and chopped nuts.
- Pour the warm nut butter mixture over the dry ingredients, mixing until everything is well coated.
- Spread the mixture evenly into the prepared baking pan, pressing down firmly to compact.
- Refrigerate for at least 1 hour to set.
- Once set, lift the bars out of the pan using the parchment paper, cut into squares, and enjoy!
Notes
For best results, press firmly to ensure bars hold together and refrigerate long enough. Optional flavor enhancements include vanilla extract, cinnamon, or nutmeg. These bars can be frozen for up to three months.
